North Canton Resident Interns at Brookside Country Club

North Canton resident, Brittany Moore, a sophomore hospitality management major at Ashland University, completed a summer internship with Brookside Country Club in Canton. The internship was under the supervision of the Director of Food and Beverage, Troy Grove.

Moore is the daughter of Greg and Kelly Moore of North Canton. She is a 2014 graduate of Hoover High School.

One of Moore's duties as the intern at Brookside Country Club included answering the phone. Her phone calls ranged from members requesting a reservation, to ordering to-go orders. When a reservation came in, she wrote it down in the reservation book, made a reservation card stating the name, time, and number of people for the reservation and put it at the table. For to-go orders, she wrote down their order, put it in the computer which sent it to the kitchen, and boxed it up so that way it could be given to the customer. She also had to type up and print off the specials menu every night. It is also her responsibility to help in the dining rooms. If the dining room was understaffed, she stepped in to help.

"My major projects that I completed were hosting, serving and executing events, and also being a floor captain. When hosting, I would seat members. In order to do this successfully, I had to keep an accurate record with me of which tables were and were not available. This prevented over-booking rooms and made seating people without reservations easier for me. I also answered the phone, took to-go orders, and watched over the dining rooms," Moore said. "Serving and executing events was my next major project. This specific task was when I helped my supervisor successfully host events. I and a team of employees would set up events and tear them down."

One of Moore's final responsibilities was becoming a floor captain for many events at Brookside. With this task, she paid a lot of attention to detail to events. She made sure not only that the event ran successfully, but she also made sure that members and guests receive their correct meal. If any guest had complaint and wanted a different meal, she made sure that happens for them. She would go table to table and make sure each and every guest is completely satisfied. In this task, she also helped guide other servers and employees to take a course of action whenever they had a question or needed help solving a problem.

"At this internship I learned so much more than I ever thought I would. I learned how to be a waitress, along with much more. After I learned and understood exactly how what it takes to be a waitress, it wasn't really a big deal anymore. I learned how to work a POS system effectively. I also learned a lot about event management. This is very similar to business management but more focused on events such as banquets and receptions. From this, I learned how to handle countless situations. Being in this environment, I gained skills like professional communication and critical thinking. These skills are crucial to have in business management because problems arise often and it is important to solve them quickly and efficiently."

Moore truly believes that many classes at Ashland University helped her prepare for this internship. Her environmental management class was crucial to her understanding of this internship as a whole. In this class, Moore became serf safe certified. Because of this certification and the training leading up to it, she knew vital information like food storage, cooking temperatures, and holding temperatures- just to name a few. Taking classes like Organizational Theory and Design helped her understand the different business concepts. Moore's accounting classes helped her understand different number sheets stating profit and budget so she could make sense of it easily.

"Not only did it help me have a better understanding of the material given in class, but it was also able to participate more often in class with my new confidence from working this summer. Many of my professors ask often about experience related to the subject to make connections and help other students in class. Therefore, I believe I will be able to participate in class by sharing my own experiences at my internship."
